CATA's notes: Appearance: Brilliant straw yellow color with green reflections. Nose: Marked presence of apple, jasmine and anise. Spicy notes such as cloves, cinnamon and candied fruit. Mouth: Medium-high acidity that perhaps surprises, somewhat dry, with somewhat aniseed notes. Long and clean finish. Pairing: Oysters, some types of fish that are not very fatty but with a good texture, with pork and sauerkraut and with some after-dinner cheeses.
